- 2 tablespoons olive oil or butter
- 1 small onlon, chopped
- 2 xarrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 cup cooked chicken, shredded
- 3/4 cup uncooked rice (white or brown)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)

Heat olive oil in a large pot over medium heat.

Add onion, carrots, and celery. Cook until softened, about 5 minutes.

Stir in garlic and cook for 1 more minute.

Pour in chicken broth and bring to a boil.

Add uncooked rice, reduce heat, and simmer for about 15-20 minutes or until rice is tender.

Stir in cooked chicken, heat through for 3-5 minutes.
