🍗 Chicken Cacciatore Recipe

Ingredients:

  • 6 bone-in, skin-on chicken thighs
  • Salt and pepper
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/2 cup dry white wine (or chicken broth)
  • 1 (28 oz) can crushed tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/2 cup pitted black olives (Don’s special swagger)

Instructions:

  1. Pat chicken dry and season with salt and pepper.
  2. Heat olive oil in a stainless-steel Dutch oven over medium-high. Sear chicken until golden brown, about 4–5 minutes per side. Remove and set aside.
  3. In same pot, sauté onion, bell pepper, and garlic until soft (5–7 minutes). Stir in oregano and pepper flakes.
  4. Deglaze with white wine, scraping up browned bits.
  5. Pour in crushed tomatoes and bring to a simmer.
  6. Return chicken to the pot, cover, and reduce heat. Simmer for 35–40 minutes until chicken is tender.
  7. Add olives and fresh parsley, simmer uncovered for 5 more minutes.
  8. Serve hot over pasta, rice, or with crusty bread.
