Sometimes an unfinished idea just needs time to breathe. In this episode, Don opens the vault on an original song first started back in 2018 — Smooth and Easy. What began as a few chords and a feeling now becomes the spark for a brand-new 3-part creative journey. We talk about rediscovering old inspiration, the art of balance, and how a simple French dish can remind us to keep life smooth, easy, and beautifully layered.

🍽 Recipe – 🥗 Classic Salade Niçoise
Serves: 2–3 as a meal | Prep Time: 20 min | Cook Time: 20 min | Total: ~40 min
🧂 Ingredients
- 8–10 oz small waxy potatoes (baby gold or red), halved
- 6 oz green beans, trimmed
- 4 large eggs
- 8–10 oz tuna (good canned in olive oil, drained; or briefly seared fresh tuna, sliced)
- 1 cup cherry tomatoes, halved
- 1/2 cup Niçoise or Kalamata olives
- 4–6 anchovy fillets (optional but traditional)
- 2–3 cups tender lettuce or mixed greens
- 1 Tbsp capers (optional)
🥣 Dijon Vinaigrette
- 1/4 cup extra-virgin olive oil
- 2 Tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1 small garlic clove, finely minced
- 1 tsp fresh lemon juice (optional brightness)
- Salt & fresh black pepper, to taste
🔪 Instructions
- Cook potatoes & eggs: Place potatoes in salted water, bring to a boil and simmer until just tender (10–12 min). In the last 8 minutes add the eggs to the pot. Transfer both to an ice bath. Peel eggs when cool; slice in quarters.
- Blanch green beans: In the same pot, blanch beans 2–3 minutes until bright and crisp-tender. Shock in ice water; drain well.
- Make vinaigrette: Whisk olive oil, vinegar, Dijon, garlic, and lemon. Season with salt and pepper.
- Assemble: On a platter with greens, arrange potatoes, green beans, tomatoes, olives, tuna, and egg wedges in sections. Add anchovies and capers if using.
- Finish: Spoon vinaigrette over everything (or serve on the side). Season with flaky salt and pepper. Serve at room temp for best flavor.
