π½ Recipe β Turkey Meatballs with Homemade Marinara & Zucchini Ribbons

π§ Meatball Ingredients
- 1 lb ground turkey
- 1 large egg
- 1 slice frozen sourdough bread, pulsed into fresh breadcrumbs
- 2β3 Tbsp grated Parmesan cheese
- 1β2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp kosher salt (or to taste)
- 1/4 tsp black pepper
- 1β2 Tbsp olive oil (for browning)
π Simple Homemade Marinara
- 1β2 Tbsp olive oil
- 2β3 cloves garlic, minced
- 1 small onion, finely diced (optional)
- 1 can (14β15 oz) crushed tomatoes or tomato puree
- 1 tsp Italian seasoning or dried oregano/basil blend
- 1/2 tsp sugar (optional, to balance acidity)
- Salt & pepper to taste
π₯ Zucchini Ribbons
- 2β3 medium zucchini
- 1β2 tsp olive oil
- Salt & pepper to taste
πͺ Instructions
- Make breadcrumbs: Take 1 frozen slice of sourdough and pulse in a mini-chopper or blender until you have coarse crumbs. No need to thaw first.
- Mix meatballs: In a bowl combine ground turkey, egg, sourdough crumbs, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix gently until just combined. Form into meatballs about golf-ball size.
- Brown meatballs: Heat olive oil in a large skillet over medium heat. Brown meatballs on all sides (they donβt have to be cooked through yet). Transfer to a plate.
- Start marinara: In the same skillet, add a bit more olive oil if needed. SautΓ© onion (if using) until soft, then add garlic and cook 30 seconds. Pour in crushed tomatoes, Italian herbs, sugar (optional), and season with salt and pepper. Stir and bring to a gentle simmer.
- Simmer together: Nestle the browned meatballs into the marinara. Cover and simmer on low for 15β20 minutes, or until the meatballs are cooked through and the sauce thickens slightly.
- Make zucchini ribbons: While the meatballs simmer, use a vegetable peeler to shave the zucchini lengthwise into wide ribbons. Pat dry with a paper towel.
- Cook ribbons: In a separate skillet, warm a teaspoon or two of olive oil over medium heat. Add zucchini ribbons with a pinch of salt and pepper. Toss gently for 1β2 minutes just until slightly tender but still bright and a bit crisp. Donβt overcook.
- Plate & serve: Arrange zucchini ribbons on plates like pasta. Top with turkey meatballs and a generous spoonful of marinara. Finish with extra Parmesan if you like.
