🍽 Recipe: Go Big Skillet Mac & Cheese

This is comfort food turned up to 11. A bubbling skillet of golden mac & cheese with crispy edges — the songwriter’s late-night anthem.
Note: The podcast version is the “Go Big” batch (4 cups milk, feeds a small choir). For a lazy 2am skillet, scale down to 1 cup pasta, 1 cup milk, 1 cup cheese — same comfort, fewer leftovers.
📝 Ingredients
- 1 lb elbow macaroni
- 4 tbsp butter
- 4 tbsp flour
- 4 cups milk
- 4 cups shredded cheese (cheddar or mix)
- Salt & pepper
- Optional: breadcrumbs or crushed chips for topping
👨🍳 Instructions
- Cook pasta according to package directions.
- In a skillet, melt butter, whisk in flour, then slowly add milk to make a roux.
- Stir in cheese until smooth.
- Toss pasta in sauce, pour into skillet, top with more cheese and crumbs.
- Bake at 375°F for 15–20 minutes until bubbly and golden.
