🍽 Recipe – 🐟 Zucchini-Noodle Tuna Casserole (Homemade Mushroom Sauce — Small Can Version)

🧂 Ingredients
Zucchini “Noodles”
- 3 medium zucchini, sliced lengthwise into thin ribbons or thin rounds
- ½ tsp salt (to draw out moisture)
Tuna Mixture
- 2 cans (5 oz each) tuna, drained
- ½ cup diced onion
- ½ cup diced celery
- 1 egg, beaten
- 1 cup shredded cheese (cheddar, Swiss, or a blend)
- ½ tsp garlic powder
- ¼ tsp black pepper
Homemade Creamy Mushroom Sauce
- 2 Tbsp butter
- 2 Tbsp flour
- 1 small can (4 oz) mushrooms, drained and chopped
- 1 cup milk (or ¾ cup milk + ¼ cup chicken broth for extra flavor)
- ½ tsp salt
- ¼ tsp black pepper
- Optional: pinch of thyme or nutmeg
Optional Topping
- 2 Tbsp breadcrumbs or crushed pork rinds
- 1 Tbsp Parmesan cheese
- 1 Tbsp melted butter
🔪 Instructions
- Prep the zucchini: Slice the zucchini into thin ribbons (a peeler works great). Sprinkle lightly with salt and set aside 10 minutes to draw out water, then pat dry.
- Make the mushroom sauce:
In a small saucepan, melt butter over medium heat. Stir in flour and whisk for about 1 minute to make a smooth roux. Gradually whisk in milk (and broth if using). Add the drained chopped mushrooms, salt, pepper, and optional herbs. Stir and cook 3–5 minutes until thickened to a creamy gravy consistency. Remove from heat. - Sauté vegetables: In a skillet, sauté onion and celery 4–5 minutes until softened and fragrant.
- Combine tuna mixture: In a large bowl, mix tuna, sautéed vegetables, garlic powder, black pepper, cheese, egg, and the homemade mushroom sauce. Stir until well combined.
- Assemble casserole:
Lightly grease an 8×8" baking dish. Layer half the zucchini slices, half the tuna mixture, then repeat. Mix topping ingredients and sprinkle evenly on top. - Bake: Bake uncovered at 375°F (190°C) for 25–30 minutes, until bubbling and golden on top. Let rest about 5 minutes before serving.
