🍽 Recipe – Turkey Meatballs with Homemade Marinara & Zucchini Ribbons

πŸ§‚ Meatball Ingredients

  • 1 lb ground turkey
  • 1 large egg
  • 1 slice frozen sourdough bread, pulsed into fresh breadcrumbs
  • 2–3 Tbsp grated Parmesan cheese
  • 1–2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt (or to taste)
  • 1/4 tsp black pepper
  • 1–2 Tbsp olive oil (for browning)

  • 1–2 Tbsp olive oil
  • 2–3 cloves garlic, minced
  • 1 small onion, finely diced (optional)
  • 1 can (14–15 oz) crushed tomatoes or tomato puree
  • 1 tsp Italian seasoning or dried oregano/basil blend
  • 1/2 tsp sugar (optional, to balance acidity)
  • Salt & pepper to taste

  • 2–3 medium zucchini
  • 1–2 tsp olive oil
  • Salt & pepper to taste

πŸ”ͺ Instructions

  1. Make breadcrumbs: Take 1 frozen slice of sourdough and pulse in a mini-chopper or blender until you have coarse crumbs. No need to thaw first.
  2. Mix meatballs: In a bowl combine ground turkey, egg, sourdough crumbs, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix gently until just combined. Form into meatballs about golf-ball size.
  3. Brown meatballs: Heat olive oil in a large skillet over medium heat. Brown meatballs on all sides (they don’t have to be cooked through yet). Transfer to a plate.
  4. Start marinara: In the same skillet, add a bit more olive oil if needed. SautΓ© onion (if using) until soft, then add garlic and cook 30 seconds. Pour in crushed tomatoes, Italian herbs, sugar (optional), and season with salt and pepper. Stir and bring to a gentle simmer.
  5. Simmer together: Nestle the browned meatballs into the marinara. Cover and simmer on low for 15–20 minutes, or until the meatballs are cooked through and the sauce thickens slightly.
  6. Make zucchini ribbons: While the meatballs simmer, use a vegetable peeler to shave the zucchini lengthwise into wide ribbons. Pat dry with a paper towel.
  7. Cook ribbons: In a separate skillet, warm a teaspoon or two of olive oil over medium heat. Add zucchini ribbons with a pinch of salt and pepper. Toss gently for 1–2 minutes just until slightly tender but still bright and a bit crisp. Don’t overcook.
  8. Plate & serve: Arrange zucchini ribbons on plates like pasta. Top with turkey meatballs and a generous spoonful of marinara. Finish with extra Parmesan if you like.
