Broccoli Mushroom Soup (Cozy & Craveable)

We brightened it up with lemon and kept it weeknight-friendly for a lighter take on the classic.
🧾 Ingredients
- 2 Tbsp olive or avocado oil
- 2 cups sliced mushrooms
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 medium carrots, diced
- 2 ribs celery, diced
- 3–4 cups broccoli florets, divided
- 4 cups vegetable or chicken broth
- 2 cups water
- 1 Tbsp soy sauce
- 1/2 tsp salt (to taste)
- 1/4 tsp black pepper
- Juice of half a lemon
👨🍳 Directions
- Sauté mushrooms in oil over medium heat until browned. Add soy sauce and cook briefly. Set aside.
- In a soup pot, sauté onion, carrots, celery, and garlic until fragrant.
- Add broth, water, and half the broccoli. Simmer until veggies are soft (10–12 minutes).
- Use immersion blender to blend smooth (or leave it chunky if preferred).
- Add remaining broccoli florets and sautéed mushrooms. Simmer until tender (5–7 minutes).
- Finish with lemon juice, salt, and pepper. Serve warm with crusty bread.
