๐งพ Ingredients
- 1.5 to 2 lbs chicken (breast or thighs), chopped
- 2 cups sliced mushrooms
- 1 medium zucchini, chopped
- 1 green bell pepper, chopped
- 1 small yellow squash, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 small can tomato paste (6 oz)
- 1/2 to 3/4 cup water
- 1/2 tsp each: salt, basil, oregano, parsley
๐จโ๐ณ Directions
- Brown chicken briefly in a skillet (optional but flavorful).
- Sautรฉ mushrooms, squash, zucchini, onion, and bell pepper until just softened.
- Add garlic at the end and stir until fragrant.
- Transfer all ingredients to a slow cooker.
- Add diced tomatoes, tomato paste, herbs, and water. Stir well.
- Cover and cook on low for 4โ5 hours.
