Brunswick Stew (Layer by Layer GO! Style)

Ingredients
  

  • 2 lbs shredded cooked chicken (or pork, or a mix)
  • 1 medium onlon
  • 1 cup fresh, frozen or canned corn (drained)
  • 1 cup fresh, frozen or canned lima beans (drained)
  • 2 1/4 cups cups diced tomatoes (canned or fresh)
  • 3/4 cup tomato sauce
  • 1 1/2 cup chicken broth
  • 1 1/2 tbsp Worcestershire sauce
  • 1 1/2 tbsp barbecue sauce (optional for smoky flavor)
  • 1 tbsp brown sugar (optional)
  • Salt, pepper, hot sauce to taste

Brunswick Stew (with Corn)

Ingredients

  • 2 tbsp olive oil or butter
  • 1 large onion, diced
  • 2 ribs celery, diced
  • 1 green bell pepper, diced (optional)
  • 3 cloves garlic, minced
  • 3 cups cooked shredded chicken (or a mix of chicken & pulled pork)
  • 3 cups low-sodium chicken broth
  • 1 (28-oz) can crushed or diced tomatoes
  • 2 tbsp tomato paste
  • 2 medium russet or gold potatoes, peeled & ½-inch dice
  • 1½ cups corn kernels (frozen or canned, drained)
  • 1½ cups lima or butter beans (frozen or canned, drained)
  • 1 tbsp Worcestershire sauce
  • 1–2 tbsp your favorite BBQ sauce (optional, for a smoky note)
  • 1 tsp smoked paprika
  • ½ tsp dried thyme (or 1 tsp fresh)
  • 1 bay leaf
  • Kosher salt & black pepper, to taste
  • Hot sauce, to taste (optional)

Instructions

  1. Sauté the aromatics. In a large Dutch oven, heat oil over medium. Add onion, celery, and bell pepper; cook 5–6 minutes until softened. Stir in garlic; cook 30 seconds.
  2. Build the base. Stir in tomato paste and cook 1 minute. Add broth and tomatoes; scrape the bottom of the pot.
  3. Add the hearty bits. Stir in potatoes, corn, lima/butter beans, Worcestershire, BBQ sauce (if using), smoked paprika, thyme, bay leaf, and a pinch of salt & pepper.
  4. Simmer. Bring to a gentle boil, then reduce heat to low, cover, and simmer 35–45 minutes, stirring occasionally, until potatoes are tender.
  5. Finish with protein. Fold in shredded chicken (and/or pork). Simmer uncovered 10–15 minutes to thicken. Adjust salt, pepper, and hot sauce to taste. Remove bay leaf.
  6. Serve. Ladle into bowls. Great with cornbread, saltines, or a splash of cider vinegar.

Notes

  • Consistency: For thicker stew, simmer uncovered a bit longer, or mash a few potatoes against the pot side.
  • Make-ahead: Cool, then refrigerate up to 4 days or freeze up to 3 months. Flavor deepens overnight.
  • Protein swaps: Leftover smoked turkey, rotisserie chicken, or pulled pork all play nice.
