Chicken & Rice Soup

Perfect for a chilly day — simple, hearty, and full of comfort.

Ingredients
  

  • 2 tablespoons olive oil or butter
  • 1 small onlon, chopped
  • 2 xarrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 3/4 cup uncooked rice (white or brown)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Notes

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 more minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add uncooked rice, reduce heat, and simmer for about 15-20 minutes or until rice is tender.
  6. Stir in cooked chicken, heat through for 3-5 minutes.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley if desired.
