🍽 Recipe: The Revival Plate

Rosemary-roasted chicken quarter with rutabaga–garlic mash, green beans with slivered almonds, and a proper chicken gravy. Comfort that moves you forward.
📝 Ingredients
- 1 chicken leg quarter
- 1 tsp olive oil, salt & pepper to taste
- 1 tsp smoked paprika, 1 tsp garlic powder
- Fresh rosemary sprigs
- 1 large rutabaga, 2–3 cloves garlic, 1–2 potatoes (optional)
- Green beans, slivered almonds
- Chicken stock, pan drippings, 1–2 tsp flour or cornstarch (for gravy)
👨🍳 Instructions
- Roast the chicken. Preheat oven to 375°F (190°C). Pat dry. Rub with oil, salt, pepper, smoked paprika, and garlic powder. Tuck rosemary on/under the skin. Roast 35–45 minutes to 165°F/74°C. Rest 5–10 minutes.
- Rutabaga–garlic mash. Simmer peeled rutabaga (and potato if using) with whole garlic cloves in salted water until tender. Drain; mash with butter and a splash of stock or milk. Season to taste.
- Green beans with almonds. Blanch to tender-crisp. Sauté briefly with butter or oil; toss in slivered almonds and a pinch of salt.
- Pan gravy. Deglaze roast pan with stock, whisk in a light flour/cornstarch slurry, simmer to thicken. Season.
- Plate. Spoon mash, add chicken, nestle beans, and finish with gravy.
